Pecan Oat Milk Cortado (Starbucks Copycat)

Jump to Recipe - Print Recipe

If you’re nuts for nuts, you need to try my copycat Starbucks Pecan Oat Milk Cortado recipe! Made with just 4 simple ingredients, this short, stylish, and seasonal coffee drink is perfect for when you need a sweet pick-me-up without overdoing it.

When Starbucks debuted their pecan syrup back in 2017, I knew it would earn a permanent spot on their fall coffee lineup. (I mean, have you tried the salted pecan crunch cold brew yet? So good!) This year, they’re bringing back all my nut-flavored favorites from last year, including this delightfully dairy-free pecan cortado.

Too bad they’re not bringing back last year’s prices. Seriously, though. $7+ for a single drink?!? That’s a little rich for my blood. 😅 And, not to be a downer, but it appears that their prices might get even steeper. So, what’s a coffee-loving gal supposed to do? Why, take it into her own hands, of course! 💪

With my recipes for homemade pecan syrup and all most of your favorite Starbucks fall drinks (I’m working on it!), we’re gonna get through this together. I’ve got you covered, as they say, “from soup to nuts!” P.S. I’m always open for recipe requests—just comment at the bottom of the page or subscribe to my newsletter and shoot me an email.

    • Pecan Oat Milk Cortado (Starbucks Copycat)

    What does it taste like?

This copycat Starbucks pecan oatmilk cortado is comforting, refined, and just sweet enough to feel like a special treat. The blonde espresso brings a smooth, mellow coffee base with subtle citrus and caramel notes, while the pecan syrup layers in a toasty, buttery richness that feels indulgent without being heavy.

Barista-style oat milk adds a creamy, velvety texture that ties everything together, making each sip luxuriously smooth. Topping it off, the crushed maple sugar chunks melt ever so slightly, adding delicate bursts of caramelized crunch. Think of it like a smaller, less foamy version of the pecan oat milk crunch latte. In other words, yummy!

Why You’ll Love This Starbucks Cortado Recipe

    • Rich, Seasonal Flavor – The combination of smooth blonde espresso, toasty pecan sweetness, and creamy oat milk creates a perfectly balanced drink that’s warm, nutty, and comforting, while maple sugar chunks adds a subtle crunch and a hint of caramelized sweetness. Every sip feels like it was built for cooler weather.
    • Budget-Friendly – Skip the daily coffee shop run and recreate a spendy drink at home for a fraction of the cost. With just a few pantry staples and a splash of homemade pecan syrup, you can treat yourself to Starbucks-quality flavor without stretching your wallet.
    • Quick & Easy – From start to sip, this drink takes just minutes to make. Brew your espresso, steam your oat milk, and stir in the syrup. That’s it! It’s simple enough for busy mornings yet feels indulgent enough for a slow afternoon pick-me-up.

    Ingredients Needed

    • Blonde Espresso - Blonde roast coffee is a lighter roast with a mellow, smooth flavor profile and crisp finish, showcasing bright, slightly sweet notes of citrus and caramel. For an even richer, more concentrated flavor, try brewing a blonde roast ristretto—it delivers all that sweetness and complexity in a smaller, more intense shot.
    • Pecan Syrup - You’re welcome to use either store-bought or homemade—but you know which one will be cheaper and more natural. DIY FTW!
    • Barista-Style Oat Milk - Not all oat milks are great for steaming. If you want to ensure a super creamy, rich mouthfeel, grab one that’s made specifically for coffee drinks!
    • Maple Sugar Chunks - Imagine crunchy little bits of maple syrup that have a consistency like toffee. Before you ask, YES. It is as delicious as it sounds.

    Substitutions

    • Blonde Espresso - You’re welcome to use any espresso or very strongly brewed coffee of your choice.
    • Pecan Syrup - You can sweeten a cortado coffee with any coffee syrup or sauce of your choice.
    • Barista-Style Oat Milk - Feel free to swap in the plant-based or dairy milk of your choice. If you use plant-based, look for “barista” on the label!
    • Maple Sugar Chunks - While I love this sweet addition, you’re welcome to skip it. Alternatively, swap in your favorite coffee topper like cinnamon sugar or toffee bits.

How To Make Starbucks Pecan Oatmilk Cortado

Step 1: Brew – Pull your blonde roast espresso (or ristretto) directly into a 10-ounce cup, then stir in the pecan syrup. Mmm, doesn’t that smell amazing??

Step 2: Froth – Heat your barista-style oat milk until warmed to your liking, then froth it using a milk frother until it’s silky and creamy. Gently pour it over the espresso, letting the layers mingle.

Step 3: Garnish & Serve – Sprinkle crushed maple sugar chunks on top for a subtle crunch and extra burst of caramelized sweetness, then sip and savor every last drop.

    Optional Variations & Dietary Adjustments

    • Iced – Brew the espresso over ice, stir in the pecan syrup, then top with cold-frothed oat milk. While it won’t technically be a café cortado, it’s perfectly delicious on a warm day.
    • Maple Pecan Cortado – Swap half of the pecan syrup for pure maple syrup for an even more autumn-forward flavor.
    • Decaf/Caffeine Free – Use decaf blonde espresso so you can enjoy it any time of day without the buzz. Can’t do any caffeine whatsoever? Swap in your favorite alternative (like roasted chicory).

    Serving Suggestions

This pecan oat milk cortado is delicious all on its own, but it also pairs beautifully with a variety of snacks and treats. Here are some ways to enjoy it:

    • With a sweet treat. Sip alongside chewy pumpkin oatmeal cookies, high protein banana bread, or a few pumpkin protein balls for a cozy coffee break that’ll sustain you till dinnertime.
    • Paired with breakfast. Enjoy it with high protein cinnamon roll oats, high protein carrot cake overnight oats, or a stack of protein zucchini pancakes for a spectacular start to your day.
    • As an afternoon pick-me-up. Serve with a handful of pumpkin spice chex mix or roasted pumpkin seeds for a balanced sweet-and-savory snack.
    • With seasonal treats – Lean into the best season (fall, obvi) and serve it with pumpkin banana bread or pumpkin french toast.
    • On a coffee date – Make a pair of cortados and serve with cozy fall brownies for an easy at-home café moment with your bestie. Not only is it cheaper, but you also get to choose the music and the company!

    Recipe Success Tips

    • Use freshly brewed espresso. Blonde roast shines brightest when it’s fresh, so brew right before serving for the best flavor and aroma.
    • Try a ristretto shot. This shorter pull is more concentrated, giving you a sweeter, richer coffee base.
    • Warm the oat milk gently. Overheating can dull its natural creaminess; aim for around 150°F (65°C) for the perfect texture.
    • Froth for texture, not volume. Cortados aren’t meant to be overly foamy. We’re aiming for tight-knit microfoam to achieve a velvety finish.
    • Garnish the pecan cortado right before serving so the crushed maple sugar chunks stay crisp.

    FAQs

    What is a cortado?

A cortado is a coffee drink made with equal parts espresso and steamed milk, typically served in a small glass to highlight both the rich coffee and the creamy texture.

What is the difference between a latte, a flat white, a cafe cortado, and a cappuccino?

The main difference between these drinks comes down to the espresso-to-milk ratio and the texture of the milk. A latte is the creamiest, with one or more shots of espresso topped with a generous amount of steamed milk and a light layer of foam. A flat white is similar but has less milk, a stronger coffee flavor, and a thin layer of microfoam. A cortado uses equal parts espresso and steamed milk. A cappuccino has a more intense coffee flavor than a latte but features thick, airy foam on top, giving it a lighter, frothier mouthfeel.

DIY Pecan Oat Milk Cortado Nutrition

This pecan oat milk cortado is an indulgent, plant-based coffee treat with a generous dose of added sugars. Each serving has about 199 calories, most of which come from carbs—29 grams of sugar from the pecan syrup and any that are added to the oat milk. Feel free to swap in sugar-free syrup to make it less caloric and reduce the carbs.

The 6 grams of fat comes mainly from oat milk, which can help with satiety. Protein is minimal at 2 grams, while sodium is similarly modest at 85 mg. Nutritionally, the main contribution here is quick energy from the carbohydrates—this is a drink with a big glycemic impact. I recommend pairing it with a meal or snack that includes protein and fiber to help steady your blood sugar.

While I wouldn’t necessarily consider it an everyday drink, I’m a firm believer in treating yourself to small indulgences to add some joy to your day. After all, what good is a diet if you’re miserable? Enjoy every seasonal sip to the fullest, and just remember to make balanced choices throughout the rest of your day. To fall! 🍻
