Take your plant-based coffee game to a whole new level of floral awesomeness with this copycat recipe for the new Starbucks Iced Lavender Oat Milk Latte. Between the rich espresso, creamy oat milk, and lavender-scented simple syrup, each sip is sure to refresh, revivify, and delight your senses.

Starbucks recently announced its new spring lineup where lavender coffee and tea drinks dominate. There’s the two-tone wonder known as the Iced Lavender Cream Oatmilk Matcha, the steamy homemade Lavender Latte, and this frosty plant-based lavender iced latte, the coffee world is alight with the perfume of pale purple flowers.
And, while I’m a fan of all my lavender lovelies, this particular iced oat milk latte recipe has truly won my heart. It requires just 3 ingredients (including my homemade lavender simple syrup) and is ready for drinking in the time it takes to pull your espresso shots. It’s so simple, but tastes delightfully complex!

What is an Iced Lavender Oat Milk Latte?
You know that song “Walking on Sunshine” by Katrina and the Waves? This Starbucks-inspired iced lavender latte is the liquid version of THAT. It’s bright, happy, and energizing, and it absolutely SLAPS. It’s simply made by combining boldly caffeinated espresso, creamy oatmilk, and lavender syrup (made with culinary lavender buds!) all served over ice. 😋🪻
What does it taste like?
Imagine sipping on a dream, where clouds are made of creamy oat milk and the sky paints itself in hues of purple and gold. That's what you'll get with my iced lavender oat milk latte recipe.
As with any latte, the espresso forms the perfectly caffeinated foundation with smooth, toasty notes. Next, the full-fat barista blend oatmilk cascades into your cup, softening the bold, roasted flavors with lightly nutty undertones and velvety richness. But what makes this springtime offering so splendiferous is a generous squeeze of lavender syrup.
With each sip, it's as if you've wandered into an enchanted garden where the air is perfumed with the earthy sweetness of a relaxing morning dew and whispers of flowers. Each sip is a stroll through this botanic wonderland, with notes of vanilla acting as a cozy, warming beacon amidst the floral abundance.

Why You’ll Love This Iced Lavender Latte Recipe
- Quick & Easy - Everything is made in one glass, so you only need to measure, pour, and enjoy. You don’t even need a milk frother!
- Made With Just 3 Ingredients - If you’ve made (or purchased) the lavender coffee syrup in advance, the only other things you’ll need to achieve coffee shop-level greatness are oat milk and espresso.
- Perfect for Spring - The efflorescent flavor profile of this lavender iced coffee drink means it’s just begging to be served at ladies’ luncheons, Mother’s Day brunches, Easter Egg hunts, and any other sunny, celebratory salutations during iced coffee season.
Ingredients
Here's what you'll need to make this lavender-flavored masterpiece:

- Lavender Syrup - My homemade version is a snap to make. The hardest part is pouring it through a fine mesh strainer to remove the flowers!
- Espresso - If you want to make this iced oatmilk lavender latte Starbucks-style, opt for blonde roast espresso beans.
- Oat Milk - You can’t have a copycat version of a Starbucks oat milk latte without the oat milk! If possible, opt for a full-fat and/or “barista blend” variety for the best results.
Substitutions
- Lavender Syrup - Feel free to use a sugar-free alternative (e.g. monkfruit or stevia) to make your lavender latte syrup diabetic-friendly. You’re also welcome to swap in any coffee syrup flavor you prefer!
- Espresso - While it’s not technically a latte without espresso, you can make a stellar iced lavender cafe without an espresso machine by swapping in strong cold brew coffee, brewed strong coffee or French press coffee that has been chilled.
- Oat Milk - It’s only an oatmilk latte recipe if you use oat milk, but you’re absolutely welcome to use whole milk, soy milk, almond milk, coconut milk, or any plant-based milk or alternative milk of choice.

How To Make A Copycat Starbucks Iced Lavender Oat Milk Latte
Step 1: Add ice to a tall glass or other serving glass, then pour the lavender syrup over the ice.
Step 2: Pour the espresso into the glass.
Step 3: Top with oat milk. Stir if desired, then drink up!

Optional Variations & Dietary Adjustments
As much as I love this iced oat milk lavender latte recipe just the way it’s written, there’s plenty of leeway for you to make it your own. Here are just a few ideas to get you started:
- Hot Lavender Oat Milk Latte - Not a fan of iced coffee? Or is it still to chilly where you live? Not to worry! Simply steam the oat milk with the syrup added, then froth and pour over your hot espresso.
- Iced Honey Lavender Latte - Add an extra dimension of floral flavors by making your lavender syrup with a honey syrup base.
- Lavender Vanilla Latte - Since my homemade lavender syrup already has some vanilla in it, I suppose you could technically call this an iced vanilla lavender latte. However, if you want to dial back the perfumed quality of the lavender, replace half of the floral syrup with my vanilla syrup.
- White Chocolate Lavender Latte - An iced white mocha spiked with a drizzle of lavender syrup? Color me as giddy as a kid in a candy shop.
Serving Suggestions
- DIY Lavender Sugar Rim: Add a fanciful touch to your latte by dipping the rim of your glass in a shallow plate of water, then into a mix of lavender-infused sugar. It not only looks super chic but adds a sweet, floral crunch with every sip. Plus, it’s super easy to do and makes your delicious drink Instagram-worthy in seconds!
- Lavender Ice Cubes: Elevate your iced latte presentation by freezing some lavender sprigs into your ice cubes.
- Garnish Galore: Here's your time to creatively shine! A sprig of fresh lavender or a twist of lemon peel can add a pop of color and an extra layer of flavor to your drink. If you have some on hand, you could even add a sprinkle of dried edible lavender flowers on top for that extra Instagrammable ‘wow’ factor.
- Hosting a group? Make a pitcher of these oatmilk lavender lattes by multiplying the quantities by 6 or 8. Keep the ice separate to prevent them from becoming diluted.

Recipe Success Tips
- Filtered water is your friend. Starting with filtered water for making your coffee syrups and brewing your espresso or cold brew ensures that your flavors aren’t marred by strange tap smells.
- Use a mason jar to cut down on dishes. Rather than using a separate measuring cup, use the markings on the jar to measure your espresso and oatmilk, then add ice. Less time washing dishes = more time enjoying life.
- Get the right milk. I’ve tried probably a dozen different brands of oat milk, and they vary WIDELY in terms of taste and texture. My favorite is Oatly’s full-fat original, though I’ve also had success with shelf-stable barista blends.
- Start slow with your syrup. Lavender has a distinctive flavor that mirrors how it smells. If you’re not sure you’ll like it, start by adding a little bit at a time until you reach your perfect balance of lavender flavor.
FAQs
It’ll depend on the recipe, the milk and syrup you use, and how much syrup you add. For this iced Starbucks lavender latte, which is made with barista blend oat milk and homemade lavender syrup, you can expect each serving to be approximately 163 calories. By contrast, the Starbucks version clocks in at 210 calories for a grande.
I’d say adding lavender to your coffee is pretty darn fancy! But, if you want to kick things up a notch, go the extra mile and add a lavender sugar rim, a dollop of lavender-infused whipped cream, and a sprig of fresh lavender to make an iced lavender oat milk latte Starbucks would be jealous of.
Heck yeah, you can! In fact, it’s my preferred milk in many drinks including but not limited to this iced lavender oat milk latte as well as this classic oat milk latte, the iced gingerbread oat milk chai latte from Christmas and this iced hazelnut oat milk shaken espresso.
Homemade Iced Lavender Oat Milk Latte Nutrition
Wondering “are lavender lattes good for you?” It all depends on the recipe. If you use the same oat milk, homemade lavender syrup, and measurements as the recipe card below, you’re looking at a treat with about 165 calories, 5 grams of fat, and 28 grams of carbs, plus a small but welcome 2 grams of protein. In my world, that seems perfectly reasonable!
The only thing to really keep your eye on here is the sugar — you’re looking at 22 grams per serving, which is nearly half your recommended daily intake. If you’re still hoping for a treat later in the day, consider using less syrup or making the syrup reduced-sugar or sugar-free by using your favorite cup-for-cup alternative.

Thank you, thank you, THANK YOU for this. I was skeptical that this could taste exactly like the real thing, but it really does. Now if you just teach me how to add the Oleato foam to it, you will change my life.

I don't think I've ever had the Oleato foam but I'll add it to my list! I'm so glad you loved the lavender latte! 🙂
