    Ingredients Needed

    You only need 3 ingredients to make this caramel sauce — and there's a good chance you already have all of them in your kitchen!

    • Granulated sugar — The base of the sauce and where all that beautiful caramel flavor comes from. As the sugar heats, it melts and caramelizes, developing that rich flavor that makes caramel so irresistible.
    • Unsalted butter — Adds that classic buttery caramel flavor, and helps give the sauce its silky texture. Must be at room temperature — cold butter will cause the caramel to seize!
    • Heavy cream — Gives the sauce its smooth, pourable, luscious consistency. Also must be at room temperature for the same reason — cold cream = clumpy caramel!

    Substitutions

    • Add vanilla extract: Stir in 1 teaspoon of vanilla extract after removing the saucepan from heat for a warm, extra-indulgent depth of flavor.
    • Make it salted caramel: Add ½ teaspoon of sea salt when you add the cream for a gorgeous salted caramel sauce. It's incredible on everything!

    How to Make Caramel Sauce At Home

    Before you start, the most important thing to know: your butter and cream must be at room temperature. Cold dairy added to hot caramel will cause it to seize and clump — so pull them out of the fridge for an hour or two before you start!

    • Step 1 — Add the granulated sugar to a medium saucepan and heat over medium heat, stirring frequently. Keep stirring as the sugar heats — it will first clump together, then gradually melt into a smooth, amber-colored liquid.
    • Step 2 — Add the room-temperature butter one tablespoon at a time, whisking after each addition until fully melted and incorporated. The mixture will bubble up vigorously — that's completely normal! Keep whisking and stay calm.
    • Step 3 — Remove from heat. Slowly and carefully pour in the room-temperature heavy cream while whisking constantly. The mixture will bubble up again — just keep whisking until smooth.
    • Step 4 — Allow the caramel sauce to cool at room temperature for 15 minutes, then transfer to a mason jar or other wide-mouth container and store in the fridge for up to 1 month.

    How to Store Caramel Sauce

    The caramel sauce will be beautifully liquid when warm, but it will solidify in the fridge — this is completely normal! Make sure to store it in a container that you can both microwave and easily scoop from, like a wide-mouth mason jar.

    To use it after refrigerating, simply microwave in 15-second intervals, stirring between each, until it reaches your desired consistency. It comes back to that silky, pourable texture in no time!

    You can also freeze this caramel sauce for up to 3 months. Pour it into an airtight freezer-safe container, jar, or ice cube tray, freeze until solid, then thaw in the fridge overnight before using. It reheats perfectly and tastes just as incredible as the day you made it!

    Ways to Use Homemade Caramel Sauce

    Once you have a jar of this in your fridge, you'll find yourself reaching for it constantly. Here are some of my favorite ways to use it!

    • Coffee drinks — A caramel drizzle for coffee transforms any plain coffee or latte into something special. It's incredible stirred into hot caramel latte, drizzled over a cinnamon caramel cold brew, or used as a finishing touch on a latte.

    Tips for the Best Homemade Caramel Sauce

    • Room temperature dairy is non-negotiable. This is the most important tip! Cold butter or cream added to hot caramel will cause it to seize, clump, and potentially ruin the batch. Pull your butter and cream out of the fridge at least 1-2 hours before you start.
    • Don't walk away from the sugar. Caramelizing sugar is a process that requires your full attention. It can go from perfectly golden to burnt in a matter of seconds — stay at the stove and keep stirring!
    • Use a deep saucepan. The mixture bubbles up dramatically when you add the butter and cream. A deep saucepan prevents overflow and keeps things safe and mess-free.
    • Add the butter slowly. One tablespoon at a time is the move. Rushing this step by adding too much butter at once can cause the sauce to break and separate.
    • Don't panic when it bubbles. The vigorous bubbling when you add the butter and cream is completely normal and expected! Just keep whisking calmly and it will all come together beautifully.

    Is there a difference between caramel sauce and caramel?

    Yes! Caramel (or caramel candy) is made by cooking sugar with butter and cream to a much higher temperature, resulting in a firm, chewy candy. Caramel sauce is cooked to a lower temperature and has cream added, resulting in a smooth, pourable liquid that's perfect for drizzling over coffee and desserts.

    Why did my caramel sauce seize up or clump?

    This almost always happens because cold butter or cream was added to the hot caramel. The temperature difference causes the sugar to seize and crystallize. Always make sure your butter and cream are at room temperature before starting — it makes all the difference!

    Can I make this into a salted caramel sauce?

    Absolutely! Simply add ½ teaspoon of sea salt when you pour in the heavy cream and whisk it in. The result is a gorgeous, rich salted caramel sauce that's incredible on everything from ice cream to coffee drinks.

    Equipment

    Ingredients

    • 1 cup granulated sugar
    • 6 tablespoon unsalted butter room temperature
    • ¾ cup heavy cream room temperature

    Instructions

    • Add the sugar to your saucepan and heat over medium heat, stirring frequently. Continue to heat the sugar until melted and smooth.
    • Add the room-temperature butter 1 tablespoon at a time (it will bubble up), whisking until fully melted and incorporated into the sugar.
    • Remove from heat and slowly pour in the room-temperature cream, whisking as you pour it.
    • Allow to cool for 15 minutes at room temperature, then transfer to a mason jar or other wide-mouth container (see notes) and store in the fridge for up to 1 month.

    Notes

    Note: the caramel sauce will be liquid when warm but will solidify in the fridge. Be sure to store it in a container that you can heat in the microwave and/or scoop from if needed.
