    I’ve always loved Starbucks Frappuccinos—I mean, who wouldn’t want to dive face-first into a coffee milkshake?!? And while I haven’t met a single one I don’t thoroughly enjoy, there’s something particularly craveworthy about this caramel ribbon crunch frapp. It’s all about those layers!

    Unlike the majority of Starbucks’ frozen drink lineup, the caramel ribbon crunch is in a league of it’s own. Filling the bottom of the glass with decadent vanilla-flavored whipped cream, rich caramel sauce, and delightfully crisp toffee bits before adding the caramel-flavored frappuccino was a stroke of sheer brilliance. 

    With each sip you get the full spectrum of creamy, crunchy, frosty yumminess without having to pull your straw up to get all the goodies that are typically reserved for garnishes.     Ingredients Needed

    • Cold Brew Coffee - Make sure it’s nice and strong so the rich coffee flavor shines. 
    • Whole Milk - Starting with full-fat dairy ensures an extra creamy mouthfeel.
    • Caramel Sauce - Get (or make) the kind that you’d drizzle over an ice cream sundae—it should be thick and sticky, but still pourable. 
    • Xanthan Gum - This natural emulsifier helps to keep the frozen frappuccino layer creamy and uniform rather than separating as it melts.
    • Whipped Cream - Feel free to use either homemade or store-bought.

    Step 1: Add the ice, cold brew, milk, half of the caramel sauce, and xanthan gum to a high speed blender.

    Step 2: Blend until smooth and set aside. (It’s ready when you see a “cyclone” in your blender.)

    Step 3: Press the whipped cream into the bottom of your serving glass, smoothing it out with the back of a spoon.

    Step 4: Top the whipped cream with the remaining caramel sauce. Feel free to drizzle a little extra on the inside of the cup for a pretty presentation.

    Step 5: Add a layer of toffee bits.

    It’s hard to know for sure, but plenty of caramel sauce, whipped cream, and toffee bits probably doesn’t hurt.

    Why is Starbucks getting rid of their Frappuccino?

    Whoa, there, take a breath—because that’s not quite the case. While certain Frappuccino flavors (e.g. the caramel ribbon crunch crème frappuccino and espresso frappuccino) were pulled from the list in March of 2025, Frappuccinos in general are still very much part of the Starbucks menu—including this decadent caramel ribbon crunch flavor!

    Homemade Caramel Ribbon Crunch Frappuccino Nutrition

    At 447 calories per serving, this homemade Caramel Ribbon Crunch Frappuccino definitely falls into the treat category—but it's a fun one! The 16 grams of fat come mainly from the whipped cream and whole milk (if using), which also contribute to the drink’s creamy mouthfeel. 

    With just 4 grams of protein, it’s not a significant source—but we’ll take all we can get! 371 mg of sodium is modest but something to be aware of if you’re watching your intake. Where this drink really tips the scales is in carbohydrates—72 grams total, including 59 grams of sugar. Most of that sugar comes from the caramel sauce, milk, and whipped cream. 

    So, while it’s not an everyday beverage, it’s okay to enjoy treats like this occasionally, especially when you’re mindful of your overall daily intake.     Ingredients

    • 1 cup ice
    • ½ cup cold brew coffee
    • ½ cup whole milk
    • 4 tablespoon caramel sauce divided
    • ¼ teaspoon xanthan gum
    • ¼ cup whipped cream
    • 1 tablespoon toffee bits

    Instructions

    • In a high-speed blender, blend the ice, cold brew, milk, 2 tablespoon caramel sauce, and xanthan gum until smooth and creamy. Set aside.

      Can I make this as iced coffee? Do I just skip blending, or do I need to adjust the amounts?

        Yeah I think it would work great as an iced coffee, just leave out the xanthan gum!
