    As much as I love the fall drinks from Starbucks, I think they’re missing an obvious flavor combination. Enter my carrot cake syrup! Just a drizzle will turn your morning cuppa into a dreamy, drinkable slice of heaven. All that’s missing is the cream cheese frosting—but that can easily be remedied with a dollop of cream cheese cold foam. 😉

    Brown sugar and maple extract add a splendidly caramelized note, while the pecans infuse a subtle nuttiness that rounds everything out. A splash of vanilla brings all the flavors together, making it taste like a slice of homemade carrot cake—no fork required.

    • Pecans - These naturally sweet nuts add a lovely toastiness that I can’t get enough of. Budget tip: buy cheaper pecan pieces rather than fancy pecan halves.
    • Cinnamon Sticks & Nutmeg - Using whole cinnamon sticks infuses the syrup with spicy flavor without clouding it with sediment. A few fresh grates of nutmeg (or pre-ground nutmeg) adds another layer of complexity.
    • Vanilla Extract & Maple Extract - Vanilla is a classic addition to most dessert recipes, deepening the flavors with warm aromatic sweetness, while maple gives a hint of frosting vibes.

    Substitutions

    • Carrots - Parsnips are a great alternative, boasting a similar earthy sweetness with a hint of nuttiness.
    • Granulated Sugar - Organic cane sugar, superfine, or caster sugar are all 1:1 swaps for white sugar. 
    • Brown Sugar - You can make your own brown sugar using granulated sugar and molasses in a 1 cup : 1-2 tablespoons ratio. Alternatively, use a less-processed brown sugar like coconut sugar, maple sugar, muscovado, or grated piloncillo.
    • Pecans - Feel free to swap in your preferred carrot cake nut like walnuts or almonds.

    How To Make Carrot Cake Coffee Syrup

    Step 1: Simmer – Add the water, chopped carrots, pecans, cinnamon sticks, and nutmeg to a saucepan. Stir in the granulated sugar and brown sugar, letting them dissolve completely into the fragrant liquid. Bring the mixture to a gentle boil, then lower the heat and let it simmer until the carrots are tender and the kitchen smells like freshly baked carrot cake.

    Step 2: Steep – Once you remove the pan from heat, allow the mixture to steep for an additional 15 minutes to deepen the flavor.

    Step 3: Infuse – Remove the pan from the heat and stir in the vanilla and maple extracts. Let the syrup sit and cool for a few minutes.

    Step 4: Strain & Store – Pour the syrup through a fine mesh strainer into a clean jar or bottle, catching all the solids. Once cooled, your carrot cake syrup is ready to swirl into coffee, drizzle over pancakes, or sneak into just about anything that could use a cozy, spiced twist.

    Equipment

    • 1 medium saucepan
    • 1 fine mesh strainer
    • 1 syrup bottle or mason jar

    Ingredients

    • 1 ¼ cups water
    • 3 medium carrots peeled and chopped
    • ¾ cup brown sugar packed
    • ½ cup chopped pecans
    • ¼ cup granulated sugar
    • 3 cinnamon sticks
    • ⅛ teaspoon nutmeg
    • 1 tsp vanilla extract
    • ¼ teaspoon maple extract

    Instructions

    • Add the water, carrots, brown sugar, pecans, granulated sugar, cinnamon sticks, and nutmeg to a medium saucepan and stir over medium heat.
    • Bring the mixture to a simmer, and simmer for 10 minutes, stirring occasionally. After the 10 minutes, remove from heat and allow to cool at room temperature for 15 minutes.
    • Strain the solids from the syrup, discarding the solids and reserving the syrup. Stir the extracts into the styrup, then transfer to a mason jar or syrup bottle and store in the fridge for up to 2 weeks.

      Took me a while to comment on this one because I made it twice. The first time I just couldn’t wait and had to make it right away - and it was delicious with ground cinnamon and no nuts. I was surprised how much the carrot influenced the flavor without tasting vegetable-y. And the addition of nutmeg - subtle but delicious! And the second time with the cinnamon sticks and pecans… holy moly! It’s so good!! I absolutely LOVE the toasted cinnamon syrup (also on this site) as my go-to favorite that has saved me SO much money because I look forward to my home-made cup of coffee WAY more than anything I can buy out, so I toasted the cinnamon sticks and then added the pecans at the end to toast them a bit, too. It really made the flavor more complex! I have yet to make the cream-cheese indulgent version, but I found that it pairs really well with sweetened condensed milk, especially as iced coffee. I try to reduce the sugar a bit, but this syrup is best at close to the full 2 Tbsp serving size to get the full flavor through the coffee (I usually use the blonde espresso powder suggested in a previous latte recipe on this site).

      If you do use ground cinnamon, or even just for the nutmeg, I found straining with a nut milk bag helps reduce sediment. Also, because I am a penny pincher, I got both my cinnamon sticks and the pecans from the bulk section at the grocery store. A generous half a cup of pecans and 3 cinnamon sticks were less than $2. Finally, I ate the stewed carrots and pecans (the second time) as a little sweet fiber-filled treat - no sense wasting good food! 😋
