    Move aside, PB&J—PBIL (a.k.a. peanut butter iced latte) is the liquid, grown-up version of the childhood favorite that’s won my heart. It’s rich, creamy, salty, sweet, with just the right amount of roasty-toasty coffee bitterness. In other words, it’s a peanut and latte lovers’ perfection. 🥜🥤

    Made with homemade peanut butter coffee syrup, French press espresso, and a generous pour of milk, this 3-ingredient stunner is like coffee and dessert in one. And before you express your skepticism at the idea of peanut butter in coffee, remember—nutty coffee drinks are nothing new.

    • Salty-Sweet - The homemade coffee syrup we use to sweeten our latte has the salty nuttiness of peanut butter and the carmelly sweetness of brown sugar, lending a creamy, crave-worthy flavor profile to your iced coffee.
    • Cheaper Than A Café - It’s pretty much impossible to leave a coffee shop without spending at least $5 these days. But when you don the barista cap at home, you can get all the flavor for a fraction of the price—all without waiting in line.

    Ingredients Needed

    • Peanut Butter Coffee Syrup - While you’re welcome to use store-bought coffee syrup, my homemade version is a snap to make with just water, brown sugar, and creamy peanut butter. 
    • Espresso - The concentrated coffee flavor of espresso helps balance out the peanut buttery sweetness of the syrup.
    • 2% Milk - Since my peanut butter syrup is made with real peanut butter, this iced latte is already quite rich. Using 2% milk helps keep the fat and calories at more reasonable levels while ensuring you still get a creamy mouthfeel.

    Substitutions

    • Peanut Butter Coffee Syrup - Iced lattes can be made with any flavor of coffee syrup you like! The ratio pretty much stays the same no matter what.
    • Espresso - Feel free to swap in 8 ounces of conventional coffee that has been chilled, or make peanut butter cold brew coffee instead.
    • 2% Milk - You’re welcome to use any percentage of dairy milk or any variety of plain or vanilla-flavored plant-based milk you like.

    How To Make An Iced Peanut Butter Latte

    This speedy recipe comes together in just a few simple steps: 

    Step 1: Add the peanut butter syrup to a glass of ice.

    Step 2: Pour the espresso on top. Stir it a bit to combine.

    Step 3: Top with cold milk and enjoy! (Feel free to froth the milk a bit first if you like.)

    Optional Variations & Dietary Adjustments

    • Sugar-Free - Simply swap in the cup-for-cup brown sugar alternative of your choice when you make the peanut butter syrup, or buy a pre-made one at the store. (If you’re using plant-based milk, make sure to read your labels—most have at least a little added sugar.)
    • Vegan/Dairy-Free - Easily make a vegan version of this yummy iced coffee by using the plant-based milk of your choice. I recommend reaching for a “barista blend” whenever you’re going vegan—they’re specifically formulated to have a nice, thick consistency.  
    • Peanut Butter Cup Latte - The only thing better than peanut butter is peanut butter and chocolate. Add some Reese’s inspired goodness to your cup by using just half the syrup that’s called for and replacing the other half with mocha syrup ~or~ use your favorite chocolate milk and slightly reduce the amount of syrup you add to keep the latte from being too sweet.

    Serving Suggestions

    There’s more than one way to enjoy this iced peanut butter latte! Here are some delicious ideas to get you started:

    • Terrific Toppers - Add a dollop of whipped cream or some sweet cream cold foam and drizzle the top with extra peanut butter syrup for an extra indulgent treat. (Or use chocolate cream cold foam for more of a peanut butter cup vibe, or salted caramel cream cold foam to double down on the salty-sweet theme.)
    • Special Sauce - Drizzle a bit of peanut butter syrup and/or chocolate syrup in a clear serving glass before assembling your latte for an impressive presentation. Don’t be precious about it—a random pattern is just as pretty!
    • Sweet Pairing - Since this iced peanut butter latte is pretty sweet, I like to pair it with a high-fiber and/or high-protein snack. Think strawberry chia jam on whole grain toast, high-protein strawberry overnight oats, or a chocolate chip protein muffin.

    What peanut butter does Starbucks use?

    At the time of publication, Starbucks doesn’t yet have a peanut butter coffee syrup. The only peanut butter I’ve seen at the chain are packs of Justin’s honey peanut butter in the pre-wrapped snack packs in the deli section.

    Can you mix peanut butter in coffee?

    I probably wouldn’t recommend stirring straight up peanut butter into your coffee—it’s a bit too thick. Rather, make peanut butter syrup for a drizzle-able consistency that’ll stir into your drink more easily!

    Do peanut butter and coffee go together?

    I sure think so. If you’ve ever eaten peanut butter toast or a peanut butter cookie with your morning cuppa, you should have a pretty good idea of what to expect.

    Homemade Peanut Butter Latte Nutrition

    At 317 calories per serving, this iced peanut butter latte is a bit of a treat. But, with 11 grams of protein and 14 grams of fat (thanks to the peanut butter and milk), it also brings some staying power making it more satisfying than most coffeeshop drinks.

    The 39 grams of carbohydrates include 35 grams of sugar, mostly from the homemade peanut butter syrup. While it’s definitely a sometimes-treat, the fat and protein help slow the absorption of those sugars, which may help avoid a major blood sugar spike. For added protection, pair it with a high-fiber snack.

    If you're looking to lighten it up in terms of fat, calories, or sugar, consider using a lower-fat milk, halving the syrup, or trying a sugar substitute like monkfruit or stevia in your syrup. Either way, it’s a fun, indulgent drink that offers a little nutritional bonus from the protein-packed peanut butter. Enjoy every sip—just do it in moderation.

    Ingredients

    • ¼ cup peanut butter syrup
