    My boldly colored, delightfully sweet and juicy Watermelon Syrup recipe is the easy, 2-ingredient flavor booster you need in your summer arsenal. Ideal for adding a magenta hue and a fresh, honeyed melon flavor to anything it touches, this DIY Monin drink syrup is pure pink perfection!

    Making homemade drink syrups is one of my favorite tasks on meal-prep day. They’re invariably simple to whip up and make it so easy to add a variety of flavors to my drinks, desserts, and breakfasts. My newest watermelon syrup is right in time for summer—if you’re a fan of the fruit, you’re going to want to give it a shot. 

    Unlike fake watermelon flavorings that have an artificial tinge that’s impossible to ignore, this ferociously fuschia drizzle tastes exactly like the real thing—because it is. It’s made with just fresh watermelon and sugar!

    This homemade watermelon syrup tastes like summer in a bottle—bright, juicy, and irresistibly fresh. Made with nothing but ripe watermelon and sugar, it captures the pure essence of the fruit at its peak: sweet but not cloying, with a refreshing, melon-kissed finish that lingers on your tongue. Each drizzle bursts with the nostalgic flavor of chilled watermelon slices on a hot day—cool, lightly floral, and subtly honeyed.

    • Quick & Simple - This homemade drink syrup couldn’t be easier to make if it tried! Just sprinkle sugar over fresh watermelon chunks, let it sit and macerate for a few hours, then strain out the fruit chunks. All in, you’re looking at just 5 minutes of active prep time.
    • Bright & Fresh - With a near-neon hue and a flavor that tastes like a big bite of juicy melon, this watermelon syrup is bright in more ways than one!
    • Better-For-You - Monin watermelon syrup tastes good enough, but the ingredient list leaves much to be desired. Between the “natural” and artificial flavor, potassium sorbate, and FD&C red #40, my RDN brain short-circuits. Luckily this sweet, summery simple syrup is made with just watermelon and sugar!

    Ingredients Needed

    • Fresh Watermelon - To pick a good watermelon, look for one that feels heavy for its size with a deep hollow sound when tapped—this means it’s nice and juicy. The skin should be dull (not shiny) and firm and has a creamy yellow spot on the bottom—this means it ripened on the vine rather than a truck. 
    • Granulated Sugar - Plain white sugar has a neutral sweetness, letting the flavor of the melon shine as bright as its electric pink hue! Note that caster sugar and superfine sugar are the same as white sugar, just with smaller granules—feel free to use them as 1:1 substitutes.

    Substitutions

    • Fresh Watermelon - This recipe should work well with any type of melon you prefer—honeydew, cantaloupe, and canary melon are also yummy.
    • Granulated Sugar - Feel free to swap in pure cane sugar for a less-refined alternative.

    How To Make Watermelon Syrup

    Step 1: Sprinkle the sugar on top of the watermelon cubes and toss to combine.

    Step 2: Macerate. Let rest for about 2 hours for maceration to occur, tossing once at the halfway point. After that time, you should see the watermelon chunks surrounded by syrup. 

    Step 3: Strain the watermelon solids from the syrup. You can either toss them in the compost, or blend and freeze them for tasty ice pops.

    Step 4: Decant & Chill. Transfer the watermelon syrup to an airtight container, preferably with a pour-spout lid. Use as desired, and refrigerate for up to a week.

    Optional Variations & Dietary Adjustments

    • Refined Sugar-Free Watermelon Syrup - You’re welcome to make this a lower calorie, lower carb, and mostly diabetic-friendly syrup by swapping in the cup-for-cup sweetener of your choice (e.g. monk fruit). 
    • Add Herbs - Basil watermelon syrup and watermelon mint syrup both sound dreamy, don’t they? Simply bruise a small bunch of either herb by slapping the leaves with your palms, then add them to the bottom of the bowl with the watermelon and sugar. They should infuse the syrup with a mild herbaceousness for a fun, grown-up twist.
    • Add Citrus - Squeeze the juice of a fresh lemon or a few fresh limes over the sugared watermelon for a tangy twist.

    Add a splash of summer to all your favorite drinks and snacks with this simple watermelon syrup. Here are just a few ideas to get you started:

    • Drinks Galore: Stir into unsweetened iced tea to make a watermelon fruit tea or make a fun twist on pink lemonade. You can also make a DIY watermelon soda by adding it to sparkling water, seltzer, or club soda. Alternatively, try using watermelon syrup for cocktails like mojitos and margaritas.
    • Brighter Breakfast: Drizzle the watermelon syrup over smoothie bowls or yogurt bowls for a fruity kick.
    • Daring Desserts: Swirl into vanilla ice cream, make flavored whipped cream, or use as a topping for cheesecake or pound cake.

    Recipe Success Tips

    • Be Patient - It takes time for sugar to extract all that juicy goodness from the watermelon. Make sure to give it at least 2 hours. If you’re not going to be around, cover the top of your bowl with cling wrap and pop it in the fridge. You can leave it there for up to a day before straining.
    • Use Smart Storage - Nobody likes a sticky counter or sticky fridge! Invest in a good syrup bottle, squeeze bottle, or mason jar pour-spout lid so you can ensure the watermelon syrup goes where it’s supposed to, and nowhere else.
    • Use Good Watermelon - This goes without saying! Since it’s the star of our syrup, you want to make sure it’s harvested at peak freshness. If it’s not as sweet as you like, don’t worry—the sugar will take care of that. 😉

    How long does watermelon syrup last?

    It should keep well in the fridge for up to a week. You can also freeze it for up to 6 months. If you go this route, I recommend freezing it into ice cube shapes so you can use only what you want when you want it. 

    What to do with watermelon syrup?

    Use it to add bright watermelon flavor to anything you like! I typically use it for making pink lemonade, iced sweet tea, and watermelon cocktails, but you can also use it to flavor everything from frosting to smoothies, porridge to vinaigrettes!

    How do I make a watermelon drink?

    Start with the unsweetened base of your choosing, then mix about 2 tablespoons of watermelon syrup into each 8-ounce serving, or use it to taste. 

    Is it hard to make homemade fruit syrup? 

    Not this watermelon syrup! (Or my peach syrup, come to think of it.) Just toss fresh fruit with sugar and let the sugar extract all the juicy goodness over the course of a few hours!

    What flavors pair well with watermelon?

    Watermelon pairs well with a wide range of flavors thanks to its sweet, juicy, and subtly floral profile. Bright citrus like lime, lemon, and grapefruit enhances its refreshing qualities, while herbs such as mint, basil, and tarragon add a fresh, aromatic twist. It also complements other fruits like strawberries, blueberries, pineapple, and mango.
    For a bit of heat or contrast, spices like chili powder, Tajín, ginger, and black pepper work beautifully. Floral notes from rose water or elderflower, and sweet accents like honey, vanilla, or coconut, also make for delightful pairings.

    Homemade Watermelon Syrup

    My easy Homemade Watermelon Syrup recipe is made with just 2 ingredients & almost no prep. Perfect for summery drinks & desserts!

    Equipment

    • 1 large bowl
    • 1 syrup bottle (or large mason jar)

    Ingredients

    • 3 lbs cubed watermelon (about 6 heaping cups)
    • 2 cups granulated sugar

    Instructions

    • Toss the watermelon and sugar together until the sugar is completely moistened and evenly distributed.
    • Allow the watermelon mixture to sit at room temperature for 2 hours, tossing halfway through.
    • After 2 hours, strain the watermelon syrup from the solids using a fine mesh strainer. Reserve the syrup, discard or save the watermelon solids for another use.
    • Transfer the watermelon syrup to an airtight container or syrup bottle, and store in the fridge for up to 7 days.

    This makes about 3 cups of watermelon syrup.
