Pumpkin Cream Shaken Espresso (Starbucks Copycat)

Jump to Recipe - Print Recipe

My Pumpkin Cream Shaken Espresso is the fall drink I've been waiting for Starbucks to make official! It takes everything I love about a classic shaken espresso and crowns it with the dreamiest pumpkin cold foam. One sip and you'll see why this one's about to be everyone's new pumpkin spice season obsession.

I'm a huge fan of the original pumpkin brown sugar oatmilk shaken espresso, but this version takes things up a notch. Instead of pumpkin syrup mixed straight into the shake, the pumpkin flavor lives in a silky, frothy cold foam that sits right on top. Every sip starts with a hit of pure pumpkin cream before diving into bold, brown sugar–sweetened espresso underneath.

The base of this drink is simple: espresso, brown sugar syrup, milk, and ice, shaken together until it's cold and a little frothy — basically a pumpkin brown sugar shaken espresso with a cold foam upgrade. Then it's finished with a cloud of pumpkin cold foam made from just two ingredients. It's café-quality, but you can make it in your kitchen in about five minutes flat.

This is one of my favorite iced coffee drinks of the whole season. It's rich but not too sweet, spiced but not overwhelming, and endlessly customizable to your taste. Let's make it!

What Does the Pumpkin Cream Shaken Espresso Taste Like?

The first thing you'll notice is that cool, creamy pumpkin cold foam hitting your lips before the coffee even gets there. It's light and pillowy, with a rounded pumpkin flavor that's more like pumpkin butter than pie filling. Underneath, it's smooth and just a touch sweet.

Once you get past the foam, the espresso takes over with its bold, roasty depth. The brown sugar syrup adds a caramelized sweetness that's warmer than plain sugar, almost like a hint of molasses. Milk rounds everything out, so the whole drink tastes balanced instead of one-note.

As the cold foam melts into the coffee below, the flavors blend into something even richer. Each sip is a little different — sometimes more pumpkin, sometimes more espresso — which keeps this drink interesting from first sip to last. It's cozy and refreshing all at once.

Why You'll Love This Pumpkin Cream Shaken Espresso

Here's why this pumpkin cream shaken espresso Starbucks copycat is going straight into my fall rotation:

    • Two-Layer Flavor: Separating the cold foam from the coffee means every sip has pure pumpkin cream on top and bold espresso underneath.
    • Quick & Easy: This comes together in about 5 minutes with a handful of ingredients and a milk frother.
    • Better Than Starbucks: Homemade means you control the sweetness, the pumpkin flavor, and the milk you use, all for a fraction of the price.
    • Year-Round Treat: Since it's homemade, you're not stuck waiting for fall — make it any time you're craving that pumpkin cream flavor.

    Ingredients Needed

Here's everything you'll need to make this pumpkin cream shaken espresso at home:

    • Espresso — Freshly brewed espresso is the base of this drink. No espresso machine? Cold brew concentrate or instant espresso works too.
    • Brown Sugar Syrup — This simple syrup made with brown sugar sweetens the espresso and adds that warm, caramelized flavor.
    • Milk — Use whatever milk you love; I used 2% for a classic, creamy finish.
    • Heavy Cream — Whipped into the cold foam for that light, pillowy texture on top.
    • Pumpkin Sauce — The star of the cold foam, bringing real pumpkin flavor and cozy fall spice.

    Substitutions

Need to switch things up? Below are recommendations for ingredient substitutions to suit your tastes and preferences:

    • Espresso — No espresso machine? Dissolve 2 teaspoons of Nescafé Gold instant espresso in ½ cup of warm water for a quick substitute.
    • Brown Sugar Syrup — Skip making your own and grab a bottle of Torani Brown Sugar Syrup instead or use pumpkin spice syrup!
    • Pumpkin Sauce — Look for a bottled pumpkin sauce or pumpkin butter at the store, or blend canned pumpkin puree with a splash of maple syrup and pumpkin pie spice.
    • Milk — Any dairy or plant-based milk works here, like oat, almond, or coconut milk.
    • Heavy Cream — For a lighter foam, try half-and-half, though it won't whip up quite as thick.

How to Make Pumpkin Cream Shaken Espresso At Home

    • Step 1 — Whip up the pumpkin cold foam. In a small jar or glass, combine the heavy cream and pumpkin sauce, then froth with a milk frother until light and foamy. Set it aside while you make the espresso.
    • Step 2 — Shake the espresso base. Fill a mason jar or cocktail shaker with ice, then pour in the espresso and brown sugar syrup. Seal it up and shake for about 15 seconds until it's chilled and a little frothy.
    • Step 3 — Assemble your drink. Pour the shaken espresso (ice and all) into a tall glass, then top it off with milk. Finish with a generous layer of pumpkin cold foam on top and enjoy!

    Optional Variations & Dietary Adjustments

If you want to customize your pumpkin spice shaken espresso, here are some ideas:

    • Extra Spiced: Sprinkle pumpkin pie spice or cinnamon over the finished cold foam for extra warmth.
    • Dairy-Free: Use full-fat coconut cream instead of heavy cream for the cold foam, a dairy-free pumpkin sauce, and your favorite plant-based milk for the base.
    • Decaf: Swap in decaf espresso or decaf cold brew if you want the flavor without the caffeine kick.
    • Extra Bold: Add an extra shot of espresso for a stronger coffee flavor under all that pumpkin cream.

    Serving Suggestions

    • Cozy Morning Treat: Enjoy a freshly poured shaken espresso alongside a warm scone or muffin for a perfect breakfast pairing that’ll make your mornings feel extra special.
    • Afternoon Pick-Me-Up: Sip while you take a break from work, run errands, or enjoy your mid-day activities. It’s a delightful way to boost your afternoon energy and indulge in fall magic.
    • Fall Festive: Whip up a batch of shaken espressos to serve at a fall brunch or holiday party. The seasonal flavor will impress your guests and make your time together memorable.

    Recipe Success Tips

    • Use quality ingredients. For the best flavor, use high-quality espresso and freshly made pumpkin spice sauce. The better the ingredients, the better your drink will taste!
    • Shake, shake, shake. Don’t be shy about the shaking! Vigorously shake the jar or cocktail shaker to ensure the syrup and espresso are well combined and frothy.
    • Chill out. Before mixing, make sure your milk is cold to maintain the drink’s refreshing chill.
    • Master the flavor. Feel free to adjust the amount of brown sugar syrup to suit your taste. Add more syrup for a sweeter, spicier drink, or use less for a subtle flavor.

    FAQs

Can I order this at Starbucks?

Yes — it's part of Starbucks' fall menu, so you can order it in stores or through the app. My homemade version lets you make it any time, though, without waiting for pumpkin season.

Can I make this without a milk frother?

Yes, though the cold foam won't be quite as thick and pillowy. Whisk the cream and pumpkin sauce vigorously by hand, or shake them together in a small jar for a few extra seconds.

Can I make the brown sugar syrup ahead of time?

Absolutely — brown sugar syrup keeps well in the fridge for a couple of weeks in a sealed jar. Make a batch on Sunday and you'll have it ready for shaken espressos all week.

How can I make this shaken espresso drink less sweet?

Cut back on the brown sugar syrup, or use a sugar-free version if you prefer a lighter drink. The pumpkin cold foam adds its own natural too.
